Varenyky are small pastries made with any filling such as mushed potatoes and fried onions, ground meat and fried onions,liver and fried onions,fried cabbage with fried onions, cherries, strawberries. Served with sour cream and butter or sugar when filled with fruits.

Holubchi (Cabbage Rolls)

Holubchi

Holubchi is a sour cabbage dish and the filling is traditionally based around meat, often beef, lamb or pork and is seasoned with garlic, onion and spices. Grains such as rice and barley, eggs, mushrooms and vegetables are often included in the filling as well.

Babka Loaf

Ukrainian Babka

Babka is a spongy yeast cake that is traditionally baked for Pascha (Easter) Sunday in Ukraine. It is usually a sweet dough with raisins and other dried fruit. It is usually baked in a tall, cylindrical form. Traditional babka has some type of fruit filling, especially raisins, and is glazed with a fruit-flavored icing, sometimes with rum added. Modern babka may be chocolate or have a cheese filling.

Pascha

Pascha Bread

Pascha is a Pascha (Easter) bread eaten in Ukraine. It is also eaten in other countries with immigrant populations from Eastern Europe, including the US, Canada and the UK. Pascha is made with butter, eggs, and sugar. An egg and water mixture is used as a glaze. Orthodox Christian faithful worldwide eat this bread during Pascha.

Makovyi Knysh (Sweet Bread Rolls)

Makovyi Knysh Bread Roll

This is a wonderful Ukrainian desert that uses scalded poppy seeds as an ingredient but can use prunes, apricots and other various fruits or a mixture. The fresh fruits are ground into a pulp then let to rest while the cook prepares the dough using hot milk and butter. The ingredients are rolled into a manageable shape and baked, then cooled before serving. They’re scrumptious!

About Saint Luke

St Luke Evangelist
St. Luke (active 50 A.D.) was one of the four Evangelists. Since the 2nd century he has been regarded as the author of the Third Gospel and its sequel, the Acts of the Apostles. Tradition and one text of St. Paul's (Colossians 4:14) testify that Saint Luke was a trained physician, and painted the first icons of the Mother of God.
